The Best Chocolate Treats Ever!

Hi there!

My girlfriend gave me this recipe last year and all I can say is FANTASTIC! 

Recipe: Special K Bars

Category: Cereal Bars and Squares

Serves/Makes: 3 dozen | Difficulty Level: 2 | Ready In: < 30 minutes

 

Ingredients:

1 cup dark corn syrup

1 cup sugar

1 cup chunky peanut butter

6 cups Special K cereal

1 cup butterscotch chips

1 cup chocolate chips

 

Directions:

Bring syrup and sugar to a boil. Remove from heat and stir in peanut butter. Mix in Special K. Spread into buttered 9x13-inch pan. Melt butterscotch chips and chocolate chips. Stir and spread on top. Cut into bars.

Candied Yams

Candied Yams

 

4 fresh yams

¼ cup butter

½ cup orange juice

Zest of one small orange (grated orange peel)

Orange slices (optional)

¼ cup brown sugar

½ bag miniature marshmallows

Directions:

Boil the yams with their peel on until tender.  Let cool and remove peel.  Cut each yam into about four to five pieces and arrange in large baking dish.  Pour orange juice over yams and the orange zest.  Sprinkle with brown sugar and dot with butter.  Top with marshmallows and place orange slices on top if desired.

Bake for approximately 20 to 25 minutes at 350F until marshmallows melt.

Spiced Apple Muffins

Here is a really nice easy muffin.

Spiced Apple Muffins
Ingredients:
2 cups all purpose flour
1 teaspoon salt
1 tablespoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
2/3 cup brown sugar
2 eggs (beaten)
2/3 cup milk
1/4 cup butter (melted)
1 cup peeled and grated/shredded apple
1/4 cup chopped walnuts (optional)
Directions:
In a large bowl sift together the flour, baking powder, salt, cinnamon and nutmeg.  Mix in brown sugar.  In a separate bowl, combine eggs, milk and butter.  Mix well.  Add egg mixture to flour mixture and mix (do not over mix).  Fold in apples and walnuts (if using).  Spoon batter into lightly greased muffin tin.  Bake in preheated oven at 350F for approximately 20 minutes or until golden and baked through.  Let cool in pan for 5 minutes before removing to wire rack to cool completely.

Broccoli Salad

Cheers all!

I figured it was time to start adding some recipes to the mix. Here is one of my personal favourites! I was told that this was submitted to a local cookbook and called “Aunt Kerry’s Best Broccoli Salad.”

The BEST Broccoli Salad in Town!
Dressing:
1-1/2   cups mayonnaise (always use Hellmann’s)
2       tablespoons white wine vinegar
1       tablespoon Dijon mustard
3       tablespoons of honey
Salad:
2       bunches of broccoli (tips only) cut in flowerets
1       red onion chopped
1       cup of sunflower seeds or pine nuts
1/4     pound bacon, cooked and crumbled.
Combine mayonnaise, vinegar, mustard, honey and let stand for at least 30 minutes. The longer the dressing sits, the better the flavour.  It’s best if made the night before. Just before serving, combine the broccoli, onion, nuts (or seeds) and bacon. Add the dressing and toss the salad to lightly coat the broccoli.
I have had TONS of compliments and requests for this salad. The good thing about this dish, it can go with anything that you are serving.
